Quick Meal Ideas for Students! (healthy, vegan)

In this video I’m sharing 5 super easy, tasty and quick to make student meal ideas! Simple veggie pitas, leftover tonkatsu noodles, delicious zucchini & lemon pasta, avocado french toast and more!

#1 Avocado French Toast 0:00
1 tbsp cornstarch
½ cup non dairy milk (125ml) (first add 2 tbsp to the starch, mix, then add the rest)
1/4 tsp of salt
1/4 tsp garlic powder
¼ tsp turmeric powder
2 tsp white wine vinegar
a handful of fresh or frozen parsley, finely chopped
3-4 pieces of bread
1-2 tbsp olive oil for the pan (add 1 tbsp to begin with, see if you need more after the first few pieces)
1 avocado or 2 heaping tbsp of hummus
optional: lemon juice for the top, cherry tomatoes, smoked tofu, sesame seeds, more salt …
→ serves 2

#2 Zucchini Pasta Aglio e Oglio 2:05

200g of spaghetti or linguine (7,05oz)
generous pinch of salt for the pasta water

2 zucchinis, cut into ribbons
4-7 cloves of garlic, cut into slices
⅓ cup + 1 tbsp olive oil (90ml)
⅓ tsp chili flakes, or to taste!
salt, pepper for the zucchini
¼-½ cup of pasta water (60ml-125ml)
2 handfuls of fresh or frozen parsley, finely chopped
zest of ½ lemon
juice of ½ lemon
overall salt to taste

→ serves 2-3

#3 Sweet & Salty Sesame Granola 4:10

½ cup oats (45g)
a generous pinch of salt
2 tsp ground flax seeds
¼ tsp cinnamon
2 tsp sesame seeds
1 ¼ tbsp sunflower seed oil
1 ¼ tbsp maple syrup
if needed: 1-2 tsp non dairy milk

serve with vegan yogurt, banana, sweetener if needed

→ serves 1

#4 Quick Veggie Pita 5:52

1 pita, toasted
1 ⅓ cup small cut frozen veggies (~170g)
1 tbsp vegan butter
1 squeeze of lemon
1-2 tbsp frozen parsley
1-2 handfuls of fresh spinach
50g vegan feta (1,76oz) or 1-2 tbsp hummus
salt and seasoning to taste (i added some of the salty liquid the feta comes with)
optional: hot sauce to taste

→ serves 1

#5 Leftover Tonkatsu Noodles 7:12

bit of oil for the pan
a pinch of red pepper flakes
1 tsp sesame seeds
~ ⅔ cup legumes of choice (about 110g, i did a mix of chickpeas and corn)
1 tbsp soy sauce or vegan worcestershire sauce
50g glass noodles (1,76oz)
1 spring onion, chopped

for the sauce:
1 1/2 tbsp ketchup
1 tbsp vegan worcestershire sauce or soy sauce
1 tbsp rice vinegar or white wine vinegar
1/4 tsp garlic powder
1 tsp sesame oil
2 tsp water
1 tsp sriracha, or to taste

season to taste, serve with whatever you want! vegan chili mayo, hummus, avocado, more sesame seeds, fresh greens, cucumber, pickled onions …
